HELP!!!

OK Ladies, I need some help.

This past week has brought me to the realization that I am NOT prepared for summer. So, in an attempt to quickly get my act together {within the next week} I have decided to ask each of you for some help.

Here is my dilemma. Three times every day I am called upon to envision in my mind some amazing form of nourishment. And, to make matters worse, it is then my responsibility to create these wonder of all wonders and serve them to my family. As I have contemplated this task, I have realized how enormous it is, and how ill prepared I am for accomplishing it successfully. For some reason, my family does not like to partake of the amazingly smooth and creamy Mac & Cheese that I can so easily whip up.

Now, for you guys! I need you to help me find some wonderful, fun and EASY meal ideas that can get me through the summer. I want something that can top Rachel Ray and her overly arduous 30 minutes meals. I'm looking for the 15 minute miracle.

So, if you are up for the challenge, either leave your comment here, or email me with your ideas {recipes would be even better}. And to be honest, I will spend more that 15 minutes on dinner...but don't expect me to spend and hour unless it's Sunday.

Maybe all of you can succeed where I seem to have failed. Good Luck!


PS - I will post some of the final recipes...if I get any!

Two words...TACO RING! Seriously takes less than 30 min. and 12-15 of that is in the oven. Use a pizza stone, 1 lb. ground beef, taco seasoning, 2 cresent roll dough things and whatever toppings you like for tacos. Cook the meat and add the seasoning. Place the triangles overlapping each other around the pizza stone (I've also used a square pan). Just set them up so the points are "off" the stone. Put the meat around the circle (on the edge of the dough) and then wrap the point of the dough over the meat. Bake it for whatever it says on the dough can. Voila! Top it with cheese, sour cream, whatever...It's really good!

i like to call that type of meal: hotdogs, chicken nuggets, and cereal. :)

i would love to know what people suggest. i could really use some helpl in that department....i guess cooking in general. can't wait to see your recipe post!

I just like to eat watermelon and popsicles in the summer. If I think of anything else, I'll let you know.

My wimpy dinners are usually centered around pasta. I was surprised last week to make shrimp scampi that took 15 minutes. My kids had to pick out the shrimp, but the sauce and pasta were fine to them anyway. Another quick meal is to slow cook a pork loin all day in just water. Than at dinner time, I cut it in half, put the other half in a Tupperware container. With one half, I shred/cut up the pork and add BBQ sauce. I usually do minute rice with it, which also takes less than 15 minutes, and add a green salad. Quick! The other half pork loin I add a can of mild green enchilada sauce after it's shredded. We put it in flour tortillas and crunchy taco shells with all the fixings. I'll see if I can think of anything else. Christina is getting fussy!

I never claimed to be a great mom, so I'll admit. We do cold cereal for breakfast, PB&J with either carrot sticks or apple slices for lunch, fruit, granola bars and yogurt and popsicles for snack. Then, once per day, I make a good dinner that is balanced and healthy.
